食欲の秋! 実りの秋! 秋は果物の美味しい季節ですなあ。巷では、さつまいもを使ったスイーツ商品が続々と登場し、今では年中食える栗を使ったモンブランもこれからが本番。栗といえば、「栗ごはん」を食べられるのもこの季節の楽しみのひとつである。

ところで、栗ごはんはあるのに、同じく秋の果物、柿を使った「柿ごはん」はあまり聞かない。そもそも米と一緒に炊いて美味いのか? 気になったので実践してみた!

そもそも柿ごはんのレシピは存在するのだろうか? 調べたところ、すぐに見つかった。名古屋のお米ブランド「ヤマトライス」のサイトに紹介されていた。それによると、とてもカンタンに作ることができる。


材料は米・柿・水・酒・塩・黒ゴマ塩だけ。詳しい分量については、ヤマトライスのサイトで確認頂きたい。



皮をむいて種をとった柿を乱切りにして……


水・酒・塩・米と共に柿を炊飯器に投入。あとは通常通りの炊飯を行う。


あとは炊き上がるのを待つだけだ。

はたして、ちゃんと炊き上がっているのか? 柿はどうなった!?


おお~! ちゃんと炊けていた~!! 柿のあま~い匂いがするぞ。


使用した柿は果肉の硬い「次郎柿」である。見るからに柔らかくなっているようだ。


お茶碗に盛って黒ゴマ塩をかけて完成です。味はどうかな?



ひと口食べると、柿の果汁を吸ったごはんはほのかに甘い。ゴマ塩を振りかけることによって、その甘さが一層引き立っている。香りづけのお酒は柿と相性がいい。やわらかく香る酒の風味が食欲をそそる。


ただ、加熱した柿を食べることはあまりないので、フニャフニャとした果肉の食感に多少違和感もある。きっと食べ慣れないせいではないだろうか。編集部のメンバーにも食べてもらったら、一様に好評だった。

買いすぎた柿を持て余してしまったら、柿ごはんにすることをオススメするぞ。

この黒猫がナップサック(リュック型)で背負うことができると知って、筆者の頭の中には、真っ先にこの黒猫を小さい子どもが背負っているシーンが浮かびました・・・!いい!絶対にカワイイ!!

しかも中には、ビスケットやグミなど8種類のお菓子がギュッと詰まっているから、ハロウィン前の今の時期、子どもへの手土産にピッタリ

5歳児が背負ったらこんな感じ。ちょっとひもが長いかな?

首元で2部屋に分かれる仕組み


ニャップサックは大(胴体)・小(顔)2つの部屋からできています。顔の部分からはお菓子が2つ、身体の部分からはお菓子が6つ、1つの大きな袋に入って出てきました。

顔と胴体部分は一つにつながっており、首元の赤いひもをキュッと縛ることで上下2つの部分に分かれています。胴体部分に物を入れるときは、赤いひものあった首のあたりを内側から開き緩めると、くびれが広がります。

首元のひもを緩めると下の部屋にアクセスできます。

お菓子を食べた後は、ハロウィンの仮装アイテムとして使ったり、外出時に子どもに背負わせても可愛いですね。

今回のテーマ「時間があるときの料理」

パプリカの甘みが生むコク

 前回はササッとできるレシピを取り上げましたが、今回はその逆です。時間があるときに作ってみたいイタリアの家庭料理をご紹介します。材料、調味料や調理道具も普段お使いのものでOK。ちょうど連休でもありますし、挑戦してみてはいかがでしょう。

 塩コショウした鶏肉は、皮目からフライパンに入れて十分に焼き色をつけ、一旦取り出します。鶏のうまみが残ったフライパンで、続けてパプリカを焼いていきます。このパプリカが味のポイント。火を通すことで甘みが増し、鶏料理にコクが出るのです。パプリカが手に入らない場合は、肉厚のピーマンで代用しても構いません。

 鶏肉は、切らずにそのままフライパンに戻します。白ワインと白ワインビネガーを加え、ぴったりと閉じることができるフタをして弱火で20分ほど、蒸すような感じで煮ていきます。焦げないように途中何度か様子を見て、水分が減りすぎていたら適宜水を足すようにします。

 仕上げにバジルの葉をちぎって加え、サッと混ぜれば完成。材料も作り方も至ってシンプルですが、本格的な味が楽しめますよ。

材料

(2人分)

鶏もも肉 2枚

パプリカ 2個

ニンニク 2片

白ワイン 100㏄

白ワインビネガー 50㏄

バジル 1枝

オリーブ油 大さじ1/2

塩 少々

コショウ 少々

作り方

❶鶏肉に塩、コショウをする。パプリカは2センチ幅の棒状に切る。

❷フライパンにオリーブ油とニンニクを入れて熱し、鶏肉を焼く。きれいに焼き色がついたら取り出す。

❸同じフライパンにパプリカを入れ、塩1つまみ(分量外)を加えてじっくり焼く。

❹③に②を戻し白ワイン、白ワインビネガーを加え、フタをして20分ほどごく弱火で蒸し煮する。途中、様子を見て水分が減りすぎたら水を足す。

❺仕上げにバジルの葉をちぎって加え、サッと混ぜる。(1人前443キロカロリー)

小松菜 1束(約200g) しらす干し 大さじ2 白ごま 小さじ1 少々
<A>※混ぜ合わせる
ごま油 大さじ1/2 柚子こしょう 小さじ1/2

  1. 小松菜は根元を切り落としてよく洗い、4cm長さに切る。
  2. 耐熱ボウルに小松菜を入れ、ふんわりとラップをかけて、電子レンジに3分間かける。水にサッとさらし、水けをしっかり絞る。
  3. ボウルに小松菜と<A>を入れてあえる。
  4. しらす干し、白ごまを加えてさらにあえ、仕上げに塩で味を調える。
  5. お皿に盛り付けたら、完成です。
